Fruits with a sweetness level of 23 are selected, which are high in altitude and small in size. Fermentation uses whole berry lactic acid and anaerobic fermentation, plus anaerobic pulp removal. The whole fermentation temperature is controlled within 20 degrees, so as to avoid the production of excessive flavor.
The final pH value is approximately 3.5. There are two types of final drying, one is directly washing the pectin with water and then drying, and the other is drying directly.
